Abstract

[Objective] To develop a shrimp freshness indicator film with good amine responsiveness and stability for the rapid and non-destructive detection of shrimp quality changes. [Methods] Using sodium carboxymethyl cellulose and starch as film-forming substrates, indicator films were prepared with grape seed proanthocyanidins, curcumin, and their mixtures as indicators. The responses of the three indicator films to aqueous solution pH and trimethylamine were compared. The detection sensitivity and storage stability of the mixed indicator film were further evaluated. The indicator film was then applied to monitor the freshness of Litopenaeus vannamei, and the correlation and kinetics between total volatile basic nitrogen (TVB-N) values of shrimp and the color difference (ΔE) of the indicator film were analyzed. [Results] The mixed indicator film exhibited high sensitivity to trimethylamine and good storage stability at different temperatures. Under storage conditions of 4, 25, and 37 ℃, the TVB-N value of shrimp was positively correlated with the ΔE value of the indicator film, with correlation coefficients all greater than 0.98. According to the Arrhenius equation, the activation energies for changes in shrimp TVB-N and the ΔE of the indicator film were 52.78 and 50.61 kJ/mol, respectively, showing good agreement. [Conclusion] The color change of the indicator film can maintain a similar variation trend with the TVB-N value of shrimp at different temperatures, thereby indicating shrimp quality and demonstrating good application prospects.
