Abstract

Rice bran oil is a unique natural edible oil with healthy benefits and a reasonable fatty acid composition. Containing natural antioxidant components including phytosterols, oryzanol, tocotrienols, and squalene, rice bran oil is characterized by high nutritional value, diverse physiological functions, and excellent frying performance, thus demonstrating broad application potential. This study reviews the research advances in the bioactive components, physiological functions, factors influencing oxidative stability, and antioxidant technologies of rice bran oil, while providing prospects for future development.
