Abstract

From the point of view of thermodynamics, the mechanical vapor recompression (MVR) system was analyzed, and the mathematical model of evaporator, steam compressor and pre-heater was built. The application of MVR technology in food industry was reviewed from the domestic and foreign research progress of the technology.
